Instructions

  1. In a small bowl, mix together the paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.

  2. Pat the chicken dry with paper towels.

  3. Lightly brush both sides of the chicken with olive oil or melted butter.

  4. Generously coat the chicken with the spice mixture, pressing it gently so it sticks.

  5. Heat a heavy skillet (preferably cast iron) over medium-high heat.

  6. Once the skillet is hot, place the chicken in the pan.

  7. Cook for 5–7 minutes on the first side without moving it, allowing the crust to develop.

  8. Flip the chicken and cook for another 5–7 minutes, or until the internal temperature reaches 165°F (74°C).

  9. Remove from the skillet and allow the chicken to rest for a few minutes before slicing.

  10. Serve warm with your favorite sides.

Notes

A cast iron skillet works best for achieving the signature blackened crust.Adjust the cayenne pepper to control the spice level.Letting the chicken rest after cooking helps keep it juicy.This seasoning also works well with fish, shrimp, or vegetables.
