Black Magic Cake is a rich, ultra-moist chocolate cake made with simple ingredients and a touch of coffee to enhance the chocolate flavor. Its tender crumb and deep cocoa taste make it a crowd-pleasing classic that’s easy to prepare.

Ingredients

  • 1¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot strong coffee (or hot water with 1 tsp instant coffee)
  • For frosting (suggested):
  • 1 cup unsalted butter, softened
  • 3½ cups powdered sugar
  • ½ cup unsweetened cocoa powder (or 100g melted chocolate)
  • 24 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Preheat oven to 350°F (180°C). Grease and flour two 9-inch cake pans and line bottoms with parchment paper if desired.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together eggs, buttermilk, oil, and vanilla until combined.
  4. Pour wet mixture into dry ingredients and stir until just combined. The batter will be thin.
  5. Stir in the hot coffee until smooth and fully incorporated.
  6. Divide batter evenly between prepared pans and bake for 30–35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  8. Make the frosting: Beat butter until fluffy. Add powdered sugar, cocoa powder, vanilla, and a pinch of salt. Mix in cream/milk a tablespoon at a time until smooth and spreadable.
  9. Frost cooled cake layers with chocolate buttercream or preferred frosting. Decorate as desired.

Notes

You can use hot water instead of coffee if preferred — but coffee intensifies the chocolate flavor. For a sheet cake, bake in a 9×13-inch pan for 35–40 minutes.Chill cake layers before frosting to reduce crumbs.Try chocolate ganache, whipped cream, or cream cheese–chocolate frosting for variations.Add chocolate chips or chopped nuts for texture, if desired.
