These homemade Bierocks are soft, fluffy bread rolls stuffed with a savory filling of seasoned ground beef, tender cabbage, and onions. A comforting Midwestern favorite with Eastern European roots, this authentic Bierocks recipe is perfect for meal prep, family dinners, or freezer-friendly lunches.
4 cups all-purpose flour
2 ¼ teaspoons active dry yeast (1 packet)
1 cup warm milk (about 110°F / 43°C)
2 tablespoons granulated sugar
¼ cup unsalted butter, melted
2 large eggs
1 teaspoon salt
1 pound ground beef
3 cups green cabbage, finely shredded
1 medium yellow onion, diced
2 cloves garlic, minced
1 teaspoon salt (or to taste)
In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
Add melted butter, eggs, salt, and flour. Mix until a soft dough forms.
Knead for 8–10 minutes until smooth and elastic.
Place dough in a lightly greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
Meanwhile, cook ground beef in a large skillet over medium heat until browned. Drain excess grease.
Add onion, cabbage, garlic, salt, and black pepper. Cook until cabbage is soft and mixture is well combined. Remove from heat and cool slightly.
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Punch down risen dough and divide into 12 equal portions.
Roll each portion into a circle.
Place a generous spoonful of filling in the center of each circle.
Fold edges up and pinch tightly to seal, forming a bun.
Place seam-side down on the prepared baking sheet.
Bake for 20–25 minutes, until golden brown.
Cool slightly before serving.
