These homemade Bierocks are soft, fluffy bread rolls stuffed with a savory filling of seasoned ground beef, tender cabbage, and onions. A comforting Midwestern favorite with Eastern European roots, this authentic Bierocks recipe is perfect for meal prep, family dinners, or freezer-friendly lunches.

Ingredients

 

For the Dough:

  • 4 cups all-purpose flour

  • 2 ¼ teaspoons active dry yeast (1 packet)

  • 1 cup warm milk (about 110°F / 43°C)

  • 2 tablespoons granulated sugar

  • ¼ cup unsalted butter, melted

  • 2 large eggs

  • 1 teaspoon salt

For the Filling:

  • 1 pound ground beef

  • 3 cups green cabbage, finely shredded

  • 1 medium yellow onion, diced

  • 2 cloves garlic, minced

  • 1 teaspoon salt (or to taste)

  • ½ teaspoon black pepper

Instructions

  • In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.

  • Add melted butter, eggs, salt, and flour. Mix until a soft dough forms.

  • Knead for 8–10 minutes until smooth and elastic.

  • Place dough in a lightly greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

  • Meanwhile, cook ground beef in a large skillet over medium heat until browned. Drain excess grease.

  • Add onion, cabbage, garlic, salt, and black pepper. Cook until cabbage is soft and mixture is well combined. Remove from heat and cool slightly.

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  • Punch down risen dough and divide into 12 equal portions.

  • Roll each portion into a circle.

  • Place a generous spoonful of filling in the center of each circle.

  • Fold edges up and pinch tightly to seal, forming a bun.

  • Place seam-side down on the prepared baking sheet.

  • Bake for 20–25 minutes, until golden brown.

  • Cool slightly before serving.

Seal dough tightly to prevent filling from leaking.Add shredded cheddar cheese for a cheesy variation.Ground turkey or chicken can replace beef.Caraway seeds or paprika add traditional flavor. Bierocks freeze exceptionally well for meal prep.
