Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mash the bananas: In a medium bowl, mash the ripe bananas with a fork until smooth and creamy. You can leave a few small chunks for texture if you prefer.
  3. Mix the ingredients: Add the oats, peanut butter (or almond butter), honey (or maple syrup), cinnamon, vanilla extract, and salt to the mashed bananas. Stir until everything is well combined. If you’re adding raisins, chocolate chips, or nuts, fold them into the dough.
  4. Form the cookies: Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie with the back of the spoon to shape them.
  5. Bake: Bake for 10-12 minutes, or until the cookies are golden brown around the edges and firm to the touch. They will continue to firm up as they cool.
