Ingredients

  • 1 loaf day-old bread (such as brioche or French bread), cut into 1-inch cubes
  • 3 ripe bananas, mashed
  • 6 large eggs
  • 2 cups milk or half-and-half
  • 1/2 cup brown sugar
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp salt
  • 1 tbsp butter (for greasing the dish)
  • Optional: 1/2 cup chopped walnuts, pecans, or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. Place cubed bread in a large mixing bowl.
  3. In another bowl, mash bananas until smooth. Add eggs, milk, brown sugar, vanilla, cinnamon, nutmeg (if using), and salt. Whisk until fully combined.
  4. Pour banana custard over the bread cubes and stir gently to coat evenly. Let sit for 10–15 minutes so the bread can absorb the mixture.
  5. Transfer mixture to the prepared baking dish and spread evenly.
  6. Sprinkle with optional toppings such as chopped nuts or chocolate chips.
  7. Bake for 40–45 minutes, or until golden on top and the center is set.
  8. Let cool slightly before serving. Serve warm, optionally topped with maple syrup or sliced bananas.
