Baked Chicken Alfredo combines tender chicken, creamy Alfredo sauce, and pasta, all baked to golden perfection for a comforting, indulgent meal.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 12 oz penne or rigatoni pasta (or any pasta of your choice)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 1/2 cups grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese (plus extra for topping)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes per side until golden and cooked through. The internal temperature should reach 165°F (75°C). Let the chicken rest for 5 minutes before slicing into strips or bite-sized pieces.
  2. Prepare the Pasta: While the chicken is cooking, cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. Make the Alfredo Sauce: In the same skillet, add a little more olive oil or butter if needed. Sauté garlic over medium heat for 1 minute until fragrant. Add the heavy cream and bring to a simmer. Stir in Parmesan and mozzarella cheeses, garlic powder, onion powder, and nutmeg. Stir until the sauce thickens and becomes creamy. Adjust the seasoning with salt and pepper.
  4. Assemble and Bake: In a large baking dish, combine the cooked pasta, sliced chicken, and Alfredo sauce. Toss to coat evenly. Top with extra shredded mozzarella for a golden crust.
  5. Bake: Place in the preheated oven and bake for 20-25 minutes, until the top is golden and bubbly.
  6. Serve: Garnish with chopped parsley and serve hot.
