Ingredients

  • 5 ounces fresh arugula
  • ½ cup sun-dried tomatoes, sliced
  • ¼ cup pine nuts
  • ¼ cup shaved Parmesan cheese (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon balsamic vinegar (optional)

Instructions

  • Place the fresh arugula in a large serving bowl.
  • Slice the sun-dried tomatoes into thin strips if needed.
