Apple Crisp Cheesecake Bites are a delightful combination of creamy cheesecake, sweet spiced apples, and a crunchy oat topping, all packed into a bite-sized treat. Perfect for parties, holidays, or a cozy dessert at home.

Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup peeled and diced apples
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats
  • 2 tbsp cold butter, cubed

Instructions

  1. Preheat oven to 325°F (163°C) and line a mini muffin pan with paper liners or lightly grease it.
  2. In a bowl, mix graham cracker crumbs and melted butter. Press about 1 tablespoon into each muffin cup to form the crust.
  3. In another bowl, beat softened cream cheese and granulated sugar until smooth. Add egg and vanilla extract, mixing until combined.
  4. Spoon cheesecake mixture over each crust, filling about ¾ full.
  5. In a small bowl, toss diced apples with brown sugar, cinnamon, and nutmeg. Spoon a small amount over the cheesecake layer in each cup.
  6. For the crumble topping, mix flour, oats, and cold cubed butter with your fingers or a pastry cutter until crumbly. Sprinkle over each cup.
  7. Bake for 20–25 minutes, until centers are set and topping is golden.
  8. Let cool completely, then refrigerate for at least 2 hours before serving.
