Almond Shortbread Cookies are rich, buttery cookies with a tender, crumbly texture and a subtle almond flavor, perfect for coffee, tea, or a classic homemade treat.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the butter and powdered sugar until smooth and creamy.
  3. Add the almond extract and mix until combined.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until a soft dough forms.
  6. Gently fold in the sliced almonds.
  7. Shape the dough into a log or press it evenly into a baking pan.
  8. Chill the dough until firm, about 30 minutes.
  9. Slice or cut the dough into cookies and place them on the prepared baking sheet.
  10. Bake for 12–15 minutes, until the edges are lightly golden.
  11. Allow cookies to cool completely before serving.
