Air Fryer Lasagna Roll Ups are crispy, cheesy, single-serving spirals of classic lasagna flavor made lighter and faster in the air fryer—perfect for weeknight meals or meal prep.

Ingredients

  • 6 lasagna noodles, cooked and cooled
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup cooked ground beef or Italian sausage (optional)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Cook lasagna noodles according to package instructions. Drain and lay flat on parchment paper to prevent sticking.
  2. In a bowl, combine ricotta, egg, 1/2 cup mozzarella, Parmesan, Italian seasoning, salt, and pepper.
  3. If using meat, stir it into the cheese mixture or layer on the noodles separately.
  4. Spread a spoonful of the filling on each noodle and roll tightly into spirals.
  5. Line a small air fryer-safe dish or foil tray with a bit of marinara sauce.
  6. Place roll ups seam-side down in the tray. Top with remaining marinara sauce and sprinkle with remaining mozzarella.
  7. Preheat air fryer to 375°F (190°C).
  8. Air fry for 10–12 minutes or until cheese is melted and tops are golden.
  9. Let cool slightly, garnish with chopped parsley or basil, and serve.

Notes

Use al dente noodles to prevent tearing while rolling.Add sautéed spinach, mushrooms, or zucchini for a vegetarian version.Substitute cottage cheese for ricotta if preferred.Freeze uncooked roll ups for future meals—just air fry from frozen with added cook time.Do not stack roll ups in the air fryer to ensure even cooking.
