These Air Fryer Falafels are a healthy and flavorful twist on the classic Middle Eastern dish, offering a crispy texture without deep frying. Made with chickpeas, herbs, and warm spices, they are perfect for pitas, salads, or as a snack.

Ingredients

  • 1 cup dried chickpeas (soaked overnight)
  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 1 small onion, chopped
  • 3 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 23 tbsp all-purpose flour or chickpea flour
  • Olive oil spray (for air frying)

Instructions

  1. Soak dried chickpeas overnight in water. Drain thoroughly before using.
  2. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, pepper, and lemon juice. Pulse until finely chopped but not pureed.
  3. Transfer mixture to a bowl and stir in baking powder and flour until just combined.
  4. Form mixture into small balls or patties using your hands or a small scoop.
  5. Preheat the air fryer to 375°F (190°C).
  6. Lightly spray falafels with olive oil and place in a single layer in the air fryer basket, without overcrowding.
  7. Air fry for 12–15 minutes, flipping halfway through, until golden and crispy on the outside.
  8. Serve warm with pita, hummus, tahini sauce, or toppings of choice.

Notes

Do not use canned chickpeas; they are too soft for this recipe.Add more flour if the mixture is too wet to bind properly.The mixture can be made up to 2 days ahead and refrigerated.Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.Reheat in the air fryer at 350°F (175°C) for 5–7 minutes for best texture.Try adding red pepper flakes or cayenne for a spicy version.
