Ingredients

  • For the noodles:
  • 8 oz Chinese wheat noodles (or spaghetti/ramen)

  • 1 tablespoon sesame oil (for tossing noodles)

For the sauce:

  • 2 tablespoons sesame paste (or tahini)

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon chili oil (adjust for heat)

  • 1 tablespoon sugar

  • 1 teaspoon garlic, minced

  • 1 teaspoon ginger, minced

  • 1 tablespoon Sichuan peppercorns (optional)

  • 1 tablespoon water (to thin the sauce if needed)

For the topping:

  • 1/2 lb ground Beef   (or chicken,  or tofu)

  • 2 tablespoons soy sauce

  • 1 tablespoon cooking oil

  • 2 cloves garlic, minced

  • 1/4 cup scallions, chopped (for garnish)

  • 1 tablespoon roasted peanuts (optional, for garnish)

  • Extra chili oil (optional, for drizzling)

Instructions

  • Cook the noodles: Bring a pot of water to a boil. Cook noodles according to package instructions (3-4 minutes for Chinese wheat noodles). Drain and toss with sesame oil to prevent sticking. Set aside.

  • Make the sauce: In a small bowl, whisk together sesame paste, soy sauce, rice vinegar, chili oil, sugar, garlic, and ginger. Add water as needed to reach desired consistency. Toast and crush Sichuan peppercorns in a skillet, then stir into the sauce for a numbing kick.

  • Cook the ground Beef : Heat cooking oil in a skillet over medium heat. Sauté garlic for 1 minute, then add ground Beef . Cook, breaking it up, until browned and crispy (5-7 minutes). Add soy sauce and cook for another 1-2 minutes.

  • Assemble the dish: Divide noodles into bowls. Pour the sauce over the noodles and toss. Top with cooked ground Beef , scallions, and peanuts.

  • Serve: Drizzle with extra chili oil if desired. Serve immediately.

Notes

  • Vegetarian Version: Substitute ground Beef  with tofu or tempeh for a vegetarian version of Dan Dan Noodles.

  • Spicy Dan Dan Noodles: Add more chili oil or sambal oelek for extra spice.

  • Peanut Butter Option: If sesame paste isn’t available, use peanut butter for a different flavor.

  • Noodle Alternatives: Use spaghetti, ramen, or rice noodles if Chinese wheat noodles are unavailable.
