Addictive Dan Dan Noodles are a delicious Chinese dish with chewy noodles, savory ground Beef and a rich, spicy sesame-based sauce. This flavorful, easy-to-make recipe features a balance of spicy, salty, and umami flavors, making it the perfect weeknight meal or comforting dish for any occasion.
8 oz Chinese wheat noodles (or spaghetti/ramen)
1 tablespoon sesame oil (for tossing noodles)
For the sauce:
2 tablespoons sesame paste (or tahini)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon chili oil (adjust for heat)
1 tablespoon sugar
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1 tablespoon Sichuan peppercorns (optional)
1 tablespoon water (to thin the sauce if needed)
For the topping:
1/2 lb ground Beef (or chicken, or tofu)
2 tablespoons soy sauce
1 tablespoon cooking oil
2 cloves garlic, minced
1/4 cup scallions, chopped (for garnish)
1 tablespoon roasted peanuts (optional, for garnish)
Extra chili oil (optional, for drizzling)
Cook the noodles: Bring a pot of water to a boil. Cook noodles according to package instructions (3-4 minutes for Chinese wheat noodles). Drain and toss with sesame oil to prevent sticking. Set aside.
Make the sauce: In a small bowl, whisk together sesame paste, soy sauce, rice vinegar, chili oil, sugar, garlic, and ginger. Add water as needed to reach desired consistency. Toast and crush Sichuan peppercorns in a skillet, then stir into the sauce for a numbing kick.
Cook the ground Beef : Heat cooking oil in a skillet over medium heat. Sauté garlic for 1 minute, then add ground Beef . Cook, breaking it up, until browned and crispy (5-7 minutes). Add soy sauce and cook for another 1-2 minutes.
