ABC Soup is a simple, comforting, and nutritious one-pot soup made with chicken bones and a variety of vegetables, perfect for both kids and adults.

Ingredients

  • 500g chicken bones
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 2 tomatoes, quartered
  • 1 onion, quartered
  • 1 corn on the cob, cut into chunks (optional)
  • Salt to taste
  • White pepper to taste
  • 2 liters water

Instructions

  1. In a large pot, bring water to a boil and blanch the chicken bones for a few minutes. Drain and rinse to remove impurities.
  2. Refill the pot with 2 liters of fresh water and add the cleaned chicken bones.
  3. Add the chopped carrots, potatoes, tomatoes, onion, and corn (if using) to the pot.
  4. Bring to a boil, then lower the heat and simmer for 1.5 to 2 hours.
  5. Season with salt and white pepper to taste.
  6. Skim off any excess fat or foam from the surface for a clearer broth.
  7. Serve hot and enjoy with rice or on its own.

Notes

For a vegetarian version, replace chicken bones with vegetable broth and skip the blanching step.Add cabbage, celery, or pumpkin for more vegetables and flavor.Include ginger or chili for a spicy kick.Enhance aroma with goji berries or Chinese red dates.Can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
