Ingredients

  • 2 cups plain yogurt (preferably full-fat or Greek yogurt)
  • 2 large eggs
  • 1/2 cup sugar (or sweetener of choice)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a round or square cake pan (approximately 8 or 9 inches) with butter or oil, or line it with parchment paper.
  2. In a large bowl, whisk together the yogurt, eggs, and sugar until smooth and fully combined. You can use a hand whisk or an electric mixer for a smoother consistency.
  3. Pour the batter into the prepared cake pan. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  4. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, slice and serve!

Notes

Add vanilla extract for a classic vanilla flavor or lemon zest for a fresh twist. This cake can be served with fresh berries, a drizzle of honey, or a simple glaze for extra sweetness. For a richer cake, you can add a little heavy cream to the batter. For a dairy-free version, you can use non-dairy yogurt and egg substitutes like flax eggs.
